Coconut oil is distinctive among dietary oils for its exceptionally high content of medium-chain triglycerides (MCTs), particularly lauric acid (C12), caprylic acid (C8), and capric acid (C10). Unlike the long-chain fatty acids that predominate in most dietary oils, MCTs are metabolised through a unique pathway — they are rapidly absorbed from the gut, transported directly to the liver via the portal vein, and preferentially converted into ketone bodies for quick cellular energy rather than being stored as body fat.
