The plant is a small evergreen bush which grows in the higher elevations of many tropical countries. When preparing green tea, the leaves are steamed and then dried. This de-activates the enzyme polyphenol oxidase responsible for oxidation. This allows the natural substances called polyphenols, including flavonoids, proanthocyanadins and catechins to remain intact in green tea.
